My name is Chris and I am the Owner/Chef at Northern Smoke BBQ in Carmel, NY. It has been one amazing and exciting year. I have learned, tried and created many different menu options. We acquired our Beer and Wine License during the summer time and now we have hit our stride. I have met and talked with many different guests over the year and have learned a lot of your names.
I want to thank all of you for supporting Northern Smoke BBQ and my concept over the last year. Thank you for tasting my creations and offering feedback. As many of you know I work hard and continue to improve our recipes and menu options.
The vision I have for this blog will be to create a place to read and interact with readers about our new menu creations and the process in creating them. I will include what works and what doesn’t work as we try these new options. Also, I have been asked over the year about the process of smoking and little tips on how home cooks can create beautiful, moist smoky goodness. I will post tricks I have learned over the last 6 years of my trial and errors as well as offer some of my personal skills I have learned over the last 14 years as a trained chef and graduate of The Culinary Institute of America in Hyde Park, NY. I will talk about sauce creations, dry rubs, marinades, mops vs. injecting, meat fabrications, wood flavor profiles. Any tip that I can pass along I will try my best to talk about. I encourage readers to ask questions and I will try my best to answer your questions.
